Keep it labeled and away from children \u2014 Cure #1 and #2 are dyed pink so they can\u2019t be mistaken for salt.<\/div><h3 class=\"hs-section-title\" id=\"calculators\">Equilibrium curing calculators<\/h3><p class=\"hs-lead\">Equilibrium curing uses exact percentages of the meat\u2019s weight, so it can\u2019t become too salty no matter how long it sits. Stir or turn every day or two.<\/p><\/div><\/div><section class=\"hs-card hs-guide-section\"><h3>Which curing salt?<\/h3><ul><li><strong>Cure #1<\/strong> (Prague Powder #1, pink curing salt): 6.25% sodium nitrite. For anything that will be cooked, smoked or eaten within a few weeks \u2014 bacon, ham, corned beef, smoked sausage, jerky.<\/li><li><strong>Cure #2<\/strong> (Prague Powder #2): 6.25% sodium nitrite plus 4% sodium nitrate, which slowly releases more nitrite over months. Only for long dry-aged products eaten uncooked \u2014 salami, coppa, prosciutto.<\/li><li>Morton Tender Quick and Sugar Cure are different products with their own directions \u2014 don\u2019t substitute them into these percentages.<\/li><\/ul><\/section><section class=\"hs-card hs-guide-section\"><h3>How long to cure<\/h3><ul><li>Equilibrium cures need about a week per inch of thickness at the thickest point \u2014 at least 7 days. Extra days won\u2019t over-salt it.<\/li><li>Keep the meat at 36\u201340\u00b0F the whole time. Above 40\u00b0F, bacteria can grow faster than the cure can work.<\/li><li>Bone-in hams and very thick cuts are best cured by injecting brine (about 10% of the meat\u2019s weight) as well as soaking, so the center cures before it spoils.<\/li><\/ul><\/section><section class=\"hs-card hs-guide-section\"><h3>Smoking &amp; cooking safely<\/h3><ul><li>Hot-smoke cured meats to a safe internal temperature: whole cuts of pork and beef 145\u00b0F with a 3-minute rest, ground meat and sausage 160\u00b0F, poultry 165\u00b0F.<\/li><li>Only cold-smoke (under 90\u00b0F) meat that is properly cured and will be cooked or dry-aged afterwards.<\/li><li>Cool smoked meat quickly, then refrigerate or freeze.
